Celebes Island, which is called "Sulawesi" in Indonesian, is located between Borneo and Papua New Guinea, where one of the most famous coffees in the world is cultivated. Our Sulawesi Kalosi comes from "Toraja"-land, where the best coffee is produced. The small town of "Kalosi" in the centre of Sulawesi serves as a collection point for the coffee production. Our "Old Kalosi-Toraja" is a rarity because it is stored for several years in a tropical humid climate with good air circulation. During its natural fermentation, the coffee loses its acidity, and the green coffee gradually changes colour from blue-green to brown. The ripened coffee is milder, the typical aromas are deeper, more complex, intense and long-lasting. Our "Old Kalosi-Toraja" is extremely aromatic, with a profound fullness reminiscent of maple syrup. It contains virtually no acidity and it develops in the cup with an extraordinarily deep, complex flavour with prominent sweet and wonderfully spicy notes reminiscent of lush forest soil (wild mushrooms, autumn leaves, moss, ...) and tropical woods. Best with a dash of cream.
