Before processing this raw coffee, only the skin of the coffee cherries is removed by machine, but not the pulp. Then the coffee cherries with the pulp around the two coffee beans are slowly dried for about two weeks in the sun with occasional shade.During drying, the pulp becomes increasingly sticky until it is completely dry and can be removed by machine. The term honey-process is derived from the temporarily sticky flesh and has nothing to do with honey. As a result, the coffee gets less acid, increasingly fruity sweetness and a smoother body.
